Carrot Halwa is a traditional Indian dessert made with carrot, milk, sugar, ghee and topped with any nuts of your choice. This halwa is made almost on all occasions and get together.
Carrot halwa is my families favorite dessert. I am sharing here the easy method of making carrot halwa in a pressure cooker. Even a novice can cook this without any hassle. To get the delicious halwa, first, saute the grated carrot in the ghee for 5 mins on low flame. This certainly adds flavor to the halwa.
I did not add any water. I directly added 2 cups full-fat milk. I also used palm sugar. You can use any sugar of your choice. You can even add jaggery in place of sugar. You can use cashews or any other nuts of your choice instead of pistachios. If using cashews, golden fry cashews in the ghee and then garnish. Make sure to cook the entire process on the medium-low flame only. Now let us see how to prepare this recipe.

- 3 cups Carrot grated
- 2 cups Full Fat Milk
- 3/4 cup Palm Sugar
- 1/4 cup Ghee
- 1 tbsp Pistachios/Pista (finely chopped) to garnish
- Heat a pressure pan and add ghee. Once ghee gets heated up, add grated carrot and saute on low flame for 4-5 mins until it turns to light orange color.
- Now add full-fat milk and bring it to boil. Once the milk starts to boil add sugar and mix thoroughly.
- Close the lid and pressure cook for 4 whistles. Let it cool completely. Then open the lid.
- Now the carrot is cooked well. But the milk will not be reduced. So simmer the milk on low flame for 10-15 mins.
- After 15 mins halwa starts to thicken. Now add cardamom powder and mix well. Once the halwa starts to gather switch off the flame. Garnish with pistachios.
- Serve hot or cold topped with ice cream.
