Homemade Rice Flour is a quintessential ingredient in almost all South Indian kitchen. If this flour is prepared in advance and stored, this can be used in different varieties of South Indian recipes.
This rice flour is mainly used in making idiyappam, adhirasam, kozhukattai, maa vilakku, murukku and much more. Even this flour can be used in making instant idli, dosa, uthappam batter. I have shown here with 1 cup of rice, you can increase the quantity as well, i.e. you can prepare it in kgs too. Prepared rice flour can be stored outside for a fortnight and can be kept in the refrigerator for 2-3 months. But before storing the rice flour it has to be dry roast to remove the moisture. You can even freeze it for a year. Now let us see how to prepare this recipe.

- Soak rice for 15 mins. Wash it thoroughly and drain it completely and keep it in a strainer for another 15 mins.
- Spread the drained rice on a clean cotton cloth and keep it in the shade for 30 mins.
- Then grind it in a mixer to a fine powder. Sieve it thoroughly. If any leftover coarse rice flour is there, grind it again and sieve it.
- The rice flour would be still wet. So you can not store this for a very long time. Heat a pan or kadai and dry roast the sieved rice flour for 4-5 mins on low flame or until it becomes dry.
- If you draw lines out of the dry rice flour, the line should come out clean it should not break. That is a perfect consistency.
- Now transfer the hot rice flour in a bowl. Let it cool completely or come to room temperature. Then transfer this to an air-tight container and store it for a long time.
- The rice should be soaked at least for an hour.
- Do not let the rice flour dry for a much longer time, maximum of 20-30 mins is enough.
- I have shown here with 1 cup of rice, you can increase the quantity as well.
