Pumpkin Stir Fry is one of the simple, yet tasty stir fry from South India. It required only a few ingredients from your pantry. The sweetness of the pumpkin and the spicy from the chili gives a great taste to this dish.
I have used shallots/sambar onion to this fry and this gives nice flavor to the dish. If you don’t have shallots replace it with regular finely chopped onion. I have also used both green chili as well as dry red chili which gives a unique taste to the dish. So do not skip any of the chilies in the recipe. Also, don’t forget to add grated coconut at the last. All South Indian poriyal tastes good with coconut init.
Make sure to cut the pumpkin into big size cubes or else while cooking it may turn mushy. Do not add more water than specified or else it may turn mushy. You can even add a tsp of sambar powder to enhance the taste. This goes well with sambar, rasam and curd rice. Now let us see how to prepare this recipe.

- 1/2 kg Pumpkin/Pusanikai cut into cube size
- 6-7 Sambar Onions/shallots finely chopped
- 1/4 tsp Turmeric powder
- 2 Green chilies slit into two
- 1 Dry Red Chili slit into two
- 1 strand Curry leaves
- 1 tbsp Coriander Leaves/Kothamalli finely chopped
- 1 tbsp Coconut grated
- 1/2 tsp Mustard seeds /kadugu
- 1/2 tsp Chana dal/kadalai paruppu
- 2 tbsp oil
- Discard the outer skin and seeds of the pumpkin and cut it into a one-inch cube.
- Heat a pan or a kadai and add oil. Once the oil gets heated add chana dal, mustard seeds and let it crackle.
- Then add shallots, green chili, dry red chili, curry leaves, a little salt and saute until onion turns translucent. Add turmeric powder and saute for a min.
- Now add pumpkin pieces, required salt and saute for a min. Then add 1/4 cup of water and mix well.
- Close the lid and cook the pumpkin for 10 mins. Stir occasionally in between.
- Now all water must be absorbed. Add grated coconut, coriander leaves and mix well. Pumpkin stir fry is ready.
