- 1/2 tsp Garam Masala Powder
- 1 tsp Coriander powder
- 1 tsp Pepper powder
- 1 tbsp Coriander Leaves/Kothamalli finely chopped
- salt to taste
- 2 tbsp oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Cumin seeds/Jeera
- Thoroughly wash mushrooms and cut lengthwise. Finely chop onions and tomatoes. In a Kadai, add oil and bring it to medium flame. Add mustard seeds, cumin seeds and let it crackle.
- Now add onion, green chilies, curry leaves and saute till onion turns translucent. Then add ginger garlic paste and saute till the raw smell goes.
- Next, add tomatoes, a little salt and saute till it becomes mushy. If required close the lid and cook until tomatoes become mushy.
- Once done, add turmeric powder, chili powder, coriander powder, garam masala powder, roasted cumin powder and saute until the raw smell goes and the oil separates.
- Now add mushrooms, required salt and mix all thoroughly. Now close the lid and cook for 4-5 mins or until mushroom is cooked well. No need to add water as the mushroom itself releases lots of water. Inbetween mix twice.
- Once done open the lid and saute until the required consistency is reached. Garnish with coriander leaves. Pepper mushroom masala is ready.
- Use an equal amount of ginger and garlic to make the paste.
- Always add a little salt to onion tomato and add remaining salt at the last.
- Don't add water as mushroom itself leaves water while cooking. If required adjust the consistency by adding or not adding the water at last.
- Roughly chop the mushrooms lengthwise, don't chop it finely as it shrinks when cooked.
- Increase or decrease the spices according to your taste.
