Rice Kheer is a popular Indian sweet dessert made with Basmati rice, sugar, milk as the base ingredients. Preparing rice kheer in Mealthy Multipot is a breeze. No need to soak rice to cook in Mealthy Multipot.
This kheer is also flavored with cardamom, saffron, cashews, and raisins or any other dry fruits. For extra flavor, you can even add rosewater or kewra water. To make the best kheer always use branded basmati rice. Also, use full-fat milk. To make it healthier, I have used organic brown sugar instead of regular sugar. You can even substitute it with jaggery, palm jaggery, or palm sugar instead.
The specified amount of sugar was enough for us. If you have sweet tooth add 1/2 cup sugar instead. The consistency of the kheer is perfect when it is served hot. As the kheer thickens after cooling down you need to add extra half a cup of milk to adjust the consistency. You can even add a tsp of rosewater or kewra water to get a nice flavor. - 1/3 cup Basmati Rice Long grain rice
- 1/3 cup Sugar
- 1 Litre Full Fat Milk
- 1 tsp Cardamom/Elaichi Powder
- 10 strands Saffron
- 10 Cashews split into two
- 20 Raisins
- 2 tbsp Ghee
- Turn on SAUTE mode. When the DISPLAY shows HOT add ghee. Add cashews and raisins and saute until cashews turn golden brown and raisins puffs up. Remove and place it on a plate.
- Thoroughly wash basmati rice (no need to soak). Now add rice in the ghee and saute for a min. Add milk, sugar, saffron, and mix all well.
- Cancel SAUTE mode. Close the lid. Turn the VENT to the SEALING position.
- Select PORRIDGE mode on HIGH for 20 mins. Once done let the Pressure Release Naturally(NPR).
- Once the pressure releases naturally(the red valve drops), turn the vent to the VENTING position and open the lid.
- Add cardamom powder and mix well. Garnish with cashews and raisins. Serve hot or refrigerate it and serve chilled.
