Chettinad Raw Banana Fry is an authentic cuisine from the region of Chettinad. This raw banana fry is made with the freshly ground masala. This is not a regular fry as we make using sambar powder.
The cut raw bananas/plantains are deep-fried in the oil until golden brown. Along with fried banana, ground masala is added, and some basic masala is also added and fried on low flame until they turn crispy.
These are the steps that should be noted while cooking this recipe:
- Grind the masala to a coarse powder.
- Add raw banana in batches and roast it until the color of the banana changes and turns slightly crisp. Do not fry it too crispy.
- You can always increase or decrease the spice according to your taste.
- Fry raw banana on low flame until it turns crispy at last.
- You can even add a tsp of pepper powder while roasting the raw banana.
This is a side dish that goes well with rice, sambar, kuzhambu, rasam, and curd.

Now let us see how to prepare this recipe.
- 8 Garlic pods
- 1 tsp Fennel seed/Sombu
- 10 Pepper Corns/milagu
- 1 strand Curry Leaves/Karuveppilai
- 2 Raw Banana/Vazhakkai medium size
- 1/4 tsp Turmeric powder
- 1 tsp Chili powder
- 1 tsp Coriander powder
- 1/2 tsp Garam Masala Powder
- salt to taste
- 1/2 tsp Mustard seeds /kadugu
- 1/2 cup oil to deep fry
- 1 strand Curry Leaves/Karuveppilai
- In a mixer jar, add all the ingredients given under "to grind" and grind to a coarse powder and set aside.
- Cut the head and tail of the raw banana and discard it. Peel the skin. Cut the raw banana lengthwise and place it in the water.
- Wash it thoroughly and drain it completely. Pat it dry with a kitchen towel.
- Heat oil in a kadai. Add raw banana few at a time and roast it until the color of the banana changes and turns slightly crisp. Do not fry it too crispy.
- Once all the raw bananas are fried place it on a kitchen towel to remove excess oil.
- Now heat a pan and add a 2 tbsp of oil. Use the same oil which we used to fry the raw banana.
- Once the oil gets heated add mustard seed, urad seeds, and let it crackle. Then add the ground masala and fry for a min or until the raw smell goes.
- Then add fried raw banana, chili powder, turmeric powder, coriander powder, garam masala powder, salt to taste, and cook for 10 to 15 mins until the raw banana turns golden brown. You can even sprinkle a hand full of water to avoid the burning of masala.
- At last, add curry leaves and saute for another minute. Delicious Chettinad vazhakkai varuval is ready.
- Grind the masala to a coarse powder.
