Oven Roasted Whole Chicken is one of the best chicken I have ever had. We usually buy this in the Lebanese restaurant. But that would be a little bit less spicy than the homemade.
As most of the restaurants are closed due to the pandemic situation and as we are also scared to buy from the restaurant, wanted to try this whole chicken at home. Good that I gave a try and this turned out to be fantastic. To be frank, it tasted much better than the store-bought one. Once mastered how to make this, now I am making this regularly by the request of my daughter. We enjoyed this chicken with homemade pita bread. I have been having my oven for the past 10 years and only now tried this skewer method.
This is one of the simple and easiest chicken roasts of all. Combine all the spices, apply the spices thoroughly on the chicken, marinate it overnight if possible, then roast it in the oven and here you go with the gorgeous oven-roasted whole chicken. Now let us see how to prepare this recipe.

- 1 kg Whole Chicken skinless
- 50 gms Butter (melted)
- 1/4 tsp Turmeric powder
- 2 tsp Chili powder
- 3 tsp Kashmiri Red Chili Powder
- 1 tsp Pepper powder
- 1 tsp Garam Masala Powder
- 1 tbsp Ginger Garlic Paste
- 1 Lemon juice
- salt to taste
- 2-3 tsp Butter (melted) to apply on chicken while roasting
- In a bowl add all the ingredients except chicken, mix well, and set aside.
- Wash the chicken thoroughly and pat it dry with a kitchen towel.
- Make gashes as shown in the video above so that masalas will get infused into the chicken very well.
- Now apply the masala into the chicken and rub it thoroughly. Make sure to apply on every cut made and inside the chicken too. Then tie and secure it with a thread as shown in the video.
- Once it is marinated it should rest at least for 4 hrs. I always leave it overnight so that it is marinated well through inside too.
- The next day, skew chicken in the oven skewer and clip it with the pins given as shown in the video. Secure it tight.
- Preheat the oven for 200 degrees C for 10 mins. Place the chicken in the skewer rack. Roast the chicken in 180 degrees for 45 to 60 mins.
- If the chicken is tender enough it will cook within 45 mins or else it will take up to 60 mins.
- While roasting, apply ghee on the chicken every 15 mins interval so that it will not turn dry.
- Once done leave it on a cooling rack for 10 mins and then relish.
- Increase or decrease the spices according to your needs.
- The specified amount of ingredients were perfect for 1kg chicken.
- Marinating the chicken is very important for this recipe. So make sure to marinate it at least 4 hrs.
- If you had enough time marinate it overnight so that all masala will be infused well inside the chicken.
- While roasting the chicken apply melted butter every 15 mins so that it will not get dry.
- You can shred this chicken and make it into a chicken wrap too or else you can have it as such.
Delicious, juicy, and the well-cooked oven-roasted whole chicken is ready to relish.
