Kaju Katli is one of the famous and rich Indian desserts which is prepared on almost all occasions. The main ingredients used are cashew and sugar. This rich dessert takes only a tsp of ghee.
Kaju means cashew and katli mean burfi. Sugar is melted in water, simmered to one string consistency. Cashew powder is added and cooked until it forms a mass. Then it is rolled on a parchment paper and cut into the desired shape(usually diamond shape). One of the simple and two-ingredient recipes which can be prepared even by the novice.
These are the simple steps to be noted while making the Kaju katli:
- keep the parchment paper ready.
- once the cashew paste starts to leave the sides, immediately transfer it on the parchment paper. Do not keep it for a long time as it will start to thicken.
- once you transfer the cashew paste start to knead it using a spatula to a smooth dough.
- when you are able to hold the warm dough, roll it to a thin sheet and cut it into the desired shape.
- initially, Kaju katli would be very soft. Once it cools down the burfi thickens.

- In a mixer jar, add cashews and grind it to a smooth powder. Use whipper mode to make the powder or else oil may start to release.
- Heat a pan. In the pan add water and sugar. Mix well until the sugar dissolves completely. Now keep on stirring until you reach the one string consistency.
- Add cashew powder and mix well. Cook until it becomes smooth and leaves the pan. It takes just 3-4 mins to reach this consistency.
- Keep a parchment paper ready. Once the paste starts to leave the sides, pour the cashew paste on the parchment paper.
- Now mix it thoroughly with the help of the spatula while it is still hot. At this stage add 1 tsp ghee and mix well. Pat it into a square shape.
- place another parchment paper or butter paper on the dough and roll it using a rolling pin to a 1/4th inch thin sheet.
- Cut to the desired shape and enjoy it.
- Instead of cashew, you can use cashew powder too.
- Once the mix is cooked and gathers as mass, let it cool for a while and then roll it while it is still warm.
- I did not add any color if you want you can add little saffron soaked in milk while cooking.
Delicious melt-in-the-mouth Kaju Katli is ready to relish.
