As Vinayaka Chathurthi is around the corner, I wanted to show the simple way of preparing modak/Kozhukattai shapes. I came up with 10 different shapes and you can make any shapes of your choice too.
You can make rice flour in 2-3 methods. I made this rice flour dough with homemade rice flour. Instead, you can even use store-bought idiyappam flour. The one given here is an easy method. For preparing rice dough either you can use a cup of boiling water or a cup of hot milk or half of the boiling water and half of the hot milk. The filling which I have used here is the regular sesame jaggery filling. This can be had as an evening snack too.

- 1 cup Rice flour Idiyappam flour
- 1 cup Boiling Water
- 1 pinch salt
- 1 tsp Sesame Oil
- 1/4 cup Black Sesame Seeds
- 1/4 cup Jaggery/Vellam grated
- 1/2 tsp Cardamom/Elaichi Powder
- 2 tbsp Coconut grated
- Heat a pan and dry roast sesame seeds until it splutters. Then let it cool completely and transfer to a mixer jar. Along with sesame seed add jaggery, grated coconut, cardamom powder, and grind to a coarse powder and set aside.
- In a wide bowl add rice flour, salt, sesame oil and mix well. Then add boiling water little by little and bring the dough to a chapati dough consistency (You may or may not required extra tbsp of water to adjust the consistency).
- As using boiling water mix dough with the help of a spatula. Close the dough with a damp cloth, so that the dough doesn't dry.
- Check the video to see how the different shapes of modaks are made.
- Once all the modak is done, place the modak in the idli pan or any steamer. Do not overcrowd the modak and steam it for 8-10 mins only. Once done let it cool for a while. sesame Jaggery modak is ready to serve to God.

- If you use homemade rice flour the outer cover of the modak stays soft for a very long time.
- You can even use the store-bought idiyappam flour.

- Cook modak for the specified time only or else it will turn hard.
- This can be had as an evening snack too.
