I was waiting for a very long time to try this Gulkand Stuffed Kesar and Chocolate Peda recipe. As Diwali is nearing thought that this should be the perfect time to make and share this recipe. This sweet is very close to our hearts.
When we were young, we used to buy this peda from the famous Salem Cafe restaurant in Salem. The bottom portion of the peda is made with Kesar, the top portion of the peda is made with cocoa, and the middle section is filled with a layer of gulkand. This peda comes in a perfect square with a 1×1 inch width and 1/4 inch thickness.
The combination of Kesar, chocolate, and gulkand merges so well and tastes fantabulous. I am feeling proud of myself that I did give a try to this peda. This tasted the same as we get in the Salem Cafe. Also, this gets ready in under 30 mins with few ingredients. To get the best taste, use full-fat milk powder and full-fat condensed milk. It also takes only a tsp of ghee. Now let us see how to prepare this recipe.

- 1 cup Milk powder full fat
- 1/2 cup Condensed milk full fat
- 1 tsp Ghee
- 2 tbsp Milk
- 1 pinch Saffron
- 1 tsp Cardamom/Elaichi Powder
- 4 tbsp Gulkand
- 1 tsp Cocoa Powder
- Soak a pinch of saffron in a tbsp of hot milk and set aside. Grease a plate with ghee and set aside. To get a proper square, I have used a cake ring.
- In a pan add ghee, milk powder, and saute it for a min. Then add condensed milk and mix for a min.
- Then add cardamom powder and cook for 2 mins or until it leaves the pan. Divide the dough into two portions and place it on a plate.
- Again heat a pan and add a portion of dough, a tbsp of prepared saffron milk, and cook it until the dough leaves the pan.
- Now transfer this dough to the greased plate and spread it to a thin layer, as shown in the video. Above this Kesar peda layer, spread the gulkand.
- Now again heat a pan, add the remaining half of the dough, a tbsp of milk, cocoa powder, and mix all thoroughly. Cook until the dough leaves the pan.
- You can not directly place this dough above the gulkand layer. It will get messed up once you start to spread. So use a separate aluminum foil. Make sure the foil is of the same size which we used for Kesar peda. Now spread the chocolate peda on the foil evenly.
- Now place this prepared chocolate peda gently above the gulkand and press it gently until it sticks to the gulkand. Now try to spread it evenly.
- Let the peda be refrigerated for 20 mins so that you can make a nice cut.
- Once it is set, cut the peda to the desired shape and enjoy it.
- Do not cook the milk powder for a very long time. It gathers within a min or two.
- You can either stuff the filling with plain gulkand or add some crushed nuts too.
- If you have no gulkand, you can make it plain without the stuffing.
