This is an easy, healthy, and instant Christmas plum cake where you no need to soak the fruits. There is no soak/maida/egg/alcohol/sugar in this plum cake. Follow the exact measurements and you will get the perfect plum cake each time.
Again this recipe is from my friend Rajeswari Annamalai, who is a healthy baker. So you can indulge in this plum cake without guilt. I have used organic whole wheat flour, organic brown sugar, and freshly squeezed orange juice. We are very much addicted to this plum cake. Almost in this week, I have prepared this plum cake twice. It tastes so delicious. I suggest you prepare this cake ahead and have it the next day. Once the fruits are soaked well in the cake, it tastes fabulous.
Follow each and every step specified here to get the perfect plum cake.
- Use exactly the same measurements to get the soft and crumbly cake.
- I have used organic whole wheat flour and organic brown sugar.
- At last, adjust water accordingly. You may or may not require 3 tbsp of water depending on the flour you are using.
- Use freshly squeezed orange juice.
- The main idea is baking for a slightly longer time at low temperature to get the flavors.
- brushing oil on top before baking gives a slight browning effect.
- Before cutting the cake, cool it completely.
- Also to cut the cake, use any serrated knife or bread knife. You need to cut the cake slowly and gently or else it may crumble due to lots of dry fruits and nuts in it.

Now let us see how to prepare this recipe.
- 1.5 cups Whole wheat flour/Atta
- 1/2 cup Powdered Brown Sugar or dark brown sugar
- 1 cup Orange Juice freshly squeezed
- 100 gms Unsalted Butter
- 5 Dates finely chopped
- 1/4 cup Tutti frutti
- 1/4 cup Black Raisins
- 1/4 cup Brown Raisins
- 1 tbsp Cranberry dried
- 1 tbsp Cashews finely chopped
- 1 tbsp Almonds finely chopped
- 1 tbsp Cashews and Raisins to garnish on top
- 1 tsp Baking soda
- 1.5 tsp Baking powder
- 1.5 tsp All spice powder 2 clove+1 inch cinnamon stick+ a small nutmeg +1 tsp ginger powder(grind all)
- 3 tbsp oil
- 1/8 tsp salt
- 3 tbsp Warm water
- 1/2 tsp oil for brushing on top before baking(this gives a slight browning effect)
- Boil orange juice and add sugar and all the dried fruits except tutti frutti and nuts.
- Lower the flame and cook for at least 5 mins until all the dry fruits turn soft. (set timer exactly for 5 mins)
- Turn off the flame and let this mixture cool for 5 mins slightly.
- Add, butter, and baking soda. It will bubble up and that's normal. Cool this completely.
- Preheat the oven to 160 degrees for 10 mins.
- To this mixture, sieve flour, spice powder, salt, and baking powder. Mix well.
- Add cashews, almonds, and tutti frutti. Add oil, warm water, and fold gently.
- Pour it into the greased tin and gently level the batter using the oiled spatula.
- Top it with some dry fruits of your choice.
- Bake in the preheated oven to 160 degrees for 40-45 mins or as per your oven.
