Drumstick leaves soup is a healthy and delicious soup, that warm-up you in the winter evenings. Drumstick leaves have many nutritional benefits and also acts as an immunity booster. Drumstick leaves can be consumed in so many ways in your daily meal.
Drumstick leaves contain Protein, Vitamin C, Calcium, Potassium, and Beta Carotene. It controls blood glucose levels and blood cholesterol. It has anti-inflammatory properties. It is rich in anti-oxidant. I am very much obsessed with this drumstick and drumstick leaves. If you have come across my blog, you would have seen so many recipes using drumstick leaves. As drumstick leaves are healthier, I include them in every day cooking when it is available. When I get drumstick leaves in bulk, I simply wash them thoroughly, dry them, make powder and store it for a long time and use it in almost all the recipes. Now let us see how to prepare this recipe.

- 1 cup Durmstick Leaves/Murungai Keerai tightly packed
- 1 Onion medium size roughly chopped
- 2 Tomatoes medium size roughly chopped
- 1 tsp Ginger Garlic Paste
- 1/4 tsp Turmeric powder
- 1 tsp Pepper
- salt to taste
- 1 tbsp oil
- Remove the drumstick leaves from its stalk carefully. You can add small tender stems but don't add the thick ones as it is not good for health. Thoroughly wash the leaves and set them aside.
- Turn on the SAUTE mode. When the display shows HOT, add oil.
- Add onion and saute until onion turns translucent. Then add ginger garlic paste and saute until the raw smell goes.
- Add tomatoes, a little salt for onion and tomatoes, turmeric powder, and saute until tomatoes turn mushy.
- once done, cancel the SAUTE mode. Mash the onion-tomato to a fine paste. If required, add some water and make a smooth paste.
- Now to this paste, add 3 cups of water, drumstick leaves, required salt, pepper, and mix all thoroughly.
- Now close the lid and turn VENT to SEALING position. Turn on the PRESSURE COOK mode on HIGH for 5 mins. Let the pressure release naturally.
- Once the pressure releases, open the lid. If required, adjust salt and pepper. Serve soup hot.
- You can make the same recipe in a regular pressure cooker for 2 whistles.
- Blend the onion-tomatoes using a hand blender or a mixer. Blend it to a smooth paste.
- Instead of regular onion, you can use 10 shallots.
- Adjust pepper according to your taste. If prepared for kids, use less pepper or as per their taste.
- You can even add some coriander leaves while sauteing the onion. That gives a nice refreshing taste to the soup.
- If kids do not like drumstick leaves while they drink soup, you can either grind it or filter it before serving.
Healthy and delicious drumstick leaves soup is ready to relish.
