One of the simple and healthy mulai keerai poriyal/amaranth leaves stir fry. Amaranth is rich in vitamins and minerals. This is found in green, red, or in purple shades. Here I have shown the green variety.
You can make so many varieties of dishes using these amaranth leaves. Usually, it is made as poriyal or cooked with lentils like moong, toor, or chana dal. You can make it as soup also. Apart from these, amaranth leaves can be used in any cooking such as idli, dosa, pakoda, vada, and much more.
Amaranth leaves are rich in antioxidants. It also helps weight management. It improves and maintains a healthy digestive system. It is rich in vitamin A and improves eyesight. Improves hair follicles and clears any skin-related problem. As it has numerous health benefits it is good to consume regularly in your diet. This stir fry can be had as an accompaniment with any rice or you can mix this with hot rice with a dollop of ghee or sesame oil and enjoy. Now let us see how to prepare this recipe.

- 1 bunch Mulai Keerai/Amaranth leaves a big bunch
- 1 Onion finely chopped
- 2 garlic big pod grated
- 1 strand Curry Leaves/Karuveppilai
- 3 Dry Red Chili split into two
- salt to taste
- 2 tbsp oil
- 1/2 tsp Mustard seeds /kadugu
- 1/2 tsp Chana dal/kadalai paruppu
- 3 tbsp Coconut grated
- Wash amaranth leaves, drain the water completely. Finely chop the leaves. Use the tender stalks. Chop them finely too. Discard the thick stalks (muththina thandu).
- In a pan, add oil. Once the oil gets heated, add mustard seeds, chana dal, and let it crackle. Let the chana dal turn golden brown.
- Now add coarsely crushed garlic and saute for a min.
- Then add onion, curry leaves, dry red chili, a little salt for onion, and saute until onion turns translucent.
- Now add amaranth leaves and saute for a min. After a min, it shrinks. Now adjust salt. Sprinkle little water and saute leaves for 4-5 mins until it is cooked well. While cooking any leafy vegetable, do not close the lid and cook.
- Once done, add grated coconut and cook for another min. Serve hot with rice.
- Garlic gives a nice flavor to the stir fry. If you don't like garlic, then you can skip it. But, I would recommend you to add it.
- Increase or decrease the chilies according to your taste.
- Always add salt after sauteeing amaranth leaves for a min. After a min, it shrinks. So you will know how much salt to exactly add.
- This is the base recipe. Along with this, we can add cooked toor dal, moong dal, or chana dal for variations.
