Fried gram kozhukattai/pottukadalai pooranam kozhukattai is our family recipe. We make modak using fried gram and jaggery as the main ingredients. Of course, we also add, cardamom powder, grated coconut, and sesame seeds to enhance the flavor.
There are 2-3 methods of making the outer dough. I have already posted how to prepare the soft outer dough 3 ways. You can check the recipe here. Use any of the methods to make the soft dough. All methods mentioned make the soft modak. Fillings can also be prepared in many ways. I have already posted sesame stuffing. Today I am sharing the stuffing with fried gram.
I have used store-bought idiyappam flour to prepare the outer dough. You can use homemade rice flour too. Check the recipe for homemade rice flour here. For preparing rice dough either you can use a cup of boiling water or a cup of hot milk or half of the boiling water and half of the hot milk. Steam modak for the specified time only or else it will turn hard. This can be had as an evening snack too. Now let us see how to prepare this recipe.

- 1/2 cup Rice flour idiyappam flour
- 1/2 tsp Sesame Oil
- 1 pinch salt
- 1 cup Water
- 1/2 cup Fried Gram/Pottukadalai
- 1/2 cup Jaggery powder
- 1/2 tsp Cardamom powder
- 1 tbsp Sesame seed/Ellu
- 1 tbsp Coconut grated
- 2 tsp Ghee
- In a bowl, add rice flour, salt, sesame oil, room temperature water, and mix all thoroughly without any lumps.
- heat a pan, and add the prepared batter. Keep the flame low. Now mix and cook until the softball is formed. Switch off the flame. Close it and keep it for 5 mins.
- When the dough is warm enough to handle, apply oil to your palm and need the dough thoroughly. There should be no lumps and cracks at this stage. The dough should be soft and pliable.
- Close the dough with a damp cloth, so that the dough doesn't dry. Soft dough is ready.
- Grind all the ingredients under "Stuffing" and set them aside.
- Method 1: Take a lemon size ball of dough and flatten it. Flatten it into a thin disc. Place the filling in the center. Fold the dough, seal it gently. There should be no cracks or openings. Make any shapes or designs of your choice. See video for reference.
- Method 2: Apply oil to modak mold. Take a small lemon size dough and press it inside the mold. Let the thin layer of dough cover the entire mold and make a dent in the center. Now fill this dent with a tbsp of prepared filling. Now take another small pinch of dough and close the filling thoroughly, so that the filling doesn't spill out while steaming.
- Make modak with the remaining dough too. Now place the modak in the idli pan or any steamer. Do not overcrowd the modak and steam it for 8-10 mins only. Once done let it cool for a while. pottukadalai modak is ready to serve God.
- You can make rice flour in 2-3 methods. The one given is the easy method.

- Cook modak for the specified time only or else it will turn hard.
- This can be had as an evening snack too.
Soft and melt in the mouth fried gram kozhukattai is ready.
