A healthy and delicious air fryer nankhatai. There is no maida/no white sugar/no baking soda in this recipe. I have used organic whole-wheat flour, organic besan, and brown sugar, instead of all-purpose flour and white sugar.
Another healthy recipe from my friend Rajeshwari Annamalai who is also a healthy baker. You can see most of my bakes are from her only. I don’t like too much sugar in my cookies. The sugar quantity mentioned here is just perfect. If you have a sugar tooth, you can always add extra sugar. But the sugar specified here is up to the mark.
Following steps to be noted while making the biscuit:
- Use ghee in its liquid form but not melted.
- Use only the specified amount of ingredients to get the perfect cookie.
- While measuring do not tightly pack the flour.
- As I have used organic whole wheat flour and besan, it required extra milk to bind the dough. Otherwise, you may or may not require the milk.
Store baked cookies in an airtight container for a week. Serve with tea/coffee/milk. Now let us see how to prepare this recipe.

- 1/2 cup Whole wheat flour/Atta
- 1/4 cup Bengal gram flour/Kadalai Maavu/Besan minus 1 tbsp
- 1/4 cup Ghee in its liquid form but not melted
- 1/4 cup Powdered Brown Sugar minus 1 tbsp
- 1/4 tsp Cardamom/Elaichi Powder
- 1/4 tsp Vanilla essence
- Pistachios/Pista to garnish
- 1-2 tbsp Milk optional
- In a bowl, add ghee and sugar. Beat it until it turns pale. Add vanilla essence, cardamom powder, and mix thoroughly.
- Place a sieve, add whole wheat flour, besan, and sieve it. Combine all well.
- If required, add 1 to 2 tbsp of milk gradually and bring it to a chapati dough consistency.
- Shape and press the nuts in the middle, as shown in the video. Preheat the air fryer to 160 degrees C for 5 mins. Align a baking sheet lined with parchment paper or aluminum foil.
- Bake immediately for 12-14 minutes, or until cookies are pale golden brown on the sides.
- Once done, remove it and let it cool. Initially, the biscuit would be very soft. Once it completely cools, it becomes crispy. Air Frier Nankhatai is ready.
