Karthigai Deepam, Thirukarthikai, or Karthikai Vilakku is a festival of lights, that is observed by Hindus of Tamil Nadu and some regions in Kerala, Karnataka, Andhra, and Sri Lanka. The full moon day of this Karthigai Month(Tamil month) is called Karthigai pournami.
Karthigai is essentially a festival of lamps. The lighted lamp is considered auspicious and believed it ward off evil forces. Pori urundai and nei appam are the most common and traditional recipes made on Karthigai deepam. Pori urundai is very easy to prepare. It hardly takes only 10 mins. To make the perfect urundai, the following steps should be considered.
- Dry roast puffed rice until it turns crispy.
- If you add a drop of jaggery syrup to water, you should be able to make a ball out of it. This is a perfect consistency.
- Before mixing puffed rice with jaggery switch off the flame.
- Once you mix puffed rice with jaggery, start making ladoos immediately. Do not wait for the mixture to turn warm. Then you will not be able to shape.

Now let us see how to prepare this pori urundai recipe.
- 2 cups Puffed rice/Pori
- 1/2 cup Jaggery
- 1/4 cup Water
- 1/4 tsp Cardamom/Elaichi Powder
- 1/4 tsp Dry ginger powder/Sukku
- 1 tsp Ghee
- Sieve the puffed rice to discard any impurities or dust. Dry roast puffed rice in a wok until it turns crispy. Once done, set it aside.
- In another pan, add ghee, jaggery, water, and boil till the jaggery melts. Filter jaggery water for any impurities.
- Now, again boil the jaggery until it reaches the ball consistency.
- That is, if you add a drop of jaggery syrup to water, you should be able to make a ball out of it as shown in the video. It should not dissolve in the water.
- Now switch off the flame. Add ginger powder, cardamom powder and mix well. To this add roasted puffed rice and mix it all together.
- While it is still hot, apply ghee to your palm and start making ladoo. Take a handful of puffed rice and shape it into a ball. You have to make it fast, or else balls won't form if it gets warm. Pori urundai is ready.
