Oil-free, healthy air-fried whole wheat Kaju namak para in just 15 mins. No compromise in taste or crunchiness. Just came out perfect. From the photo, we can see how evenly Kaju namak para is air-fried.
Namak Para and Shakkar Para are popular snacks of North India, which are prepared during the Diwali festival. Usually, these are deep-fried in oil. Namak Para is a spicy snack and the Shakkar Para is sweet. Here we are going to see how to prepare Namak para in the air fryer, that too without any oil.
You can make different variations of masala. I have used a basic one. You can even add curry leaves while making masala. Instead of chili powder, you can replace it with chili flakes too. You can even make the sweet version of this Kaju. The possibilities are endless.
I air-fried Kaju in 2 batches. Depending on the size of your air fryer basket bake it accordingly. I did not pre-heat my air fryer. Initially, I kept it for 10 mins and then increased the time for 2 more mins. So totally it took 12 mins to cook Kaju. If you don’t have an air fryer, just deep fry it in the oil on medium-low flame. Now let us see how to prepare this recipe.

- 1.25 cups Whole wheat flour/Atta
- 1/4 tsp Omam/Ajwain/Carom seed
- 1/4 tsp Baking powder
- 1/8 tsp Baking soda
- salt to taste
- 1/4 cup Ghee
- 1/2 tsp salt
- 1/2 tsp Pepper powder
- 1/2 tsp Chili powder
- 1 tsp Chat Masala Powder
- In a wide bowl, add whole wheat flour, salt, ajwain, baking powder, baking soda, and mix all thoroughly.
- To this, add ghee and crumble all thoroughly. we should be able to hold the dough. This is a perfect consistency.
- Now add water little by little and knead to a stiff dough. It took 3 to 4 tbsps of water only. Cover it and set it aside for 15 mins.
- Now mix all the ingredients under "Masala for Kaju" and set it aside.
- Grease the worktop with some oil. Take half of the dough and shape it into a ball. Roll it to a thick disc as shown in the video.
- Using a small round cookie cutter or bottle cap, cut the dough in the shape of Kaju. Prepare all and keep it ready.
- Arrange prepared Kaju in the air fryer basket. Air fry it at 175 degrees C for 10-12 mins.
- Once Kaju is ready, sprinkle prepared masala and mix it all thoroughly. Kaju namkeen is ready.
- I air-fried Kaju in 2 batches.
- Depending on the size of your air fryer basket bake it accordingly.
