Methi Mathri is a popular Indian snack made of whole wheat flour, methi leaves, spices, and ghee. Usually, the regular method of making methi mathri is deep-fried in the oil. Today we are going to see the oil-less version using an air fryer.
This methi mathri is perfect for any festival or party or can be had as an evening snack. It can be served as an accompaniment with tea or soft drinks. Follow these simple steps to get the perfect crispy methi mathri. Combine whole wheat flour, methi leaves, spices, ghee and rub it gently. we should be able to hold the dough. This is a perfect consistency. Then add little by little water, it hardly takes 3 to 4 tbsp of water only. Also, rest the dough for at least 15 mins.
I air-fried mathri in 2 batches. Instead of fresh methi leaves, you can use dried methi leaves too. If using fresh methi leaves, chop it finely. Add only leaves, do not add the stem. Depending on the size of your air fryer basket, bake it accordingly. I did not pre-heat my air fryer. Initially, I kept it for 10 mins and then increased the time for 2 more mins. So, totally it took 12 mins to cook mathri.
If you don’t have an air fryer, just deep fry it in the hot oil in a medium-low flame until it turns golden brown. Now let us see how to prepare this recipe in an air fryer.

- 1.5 cups Whole wheat flour/Atta
- 1/2 tsp Omam/Ajwain/Carom seed
- 1/2 tsp Chili powder
- 1/2 tsp Sesame seed/Ellu
- 1 tsp Coriander seeds coarsely crushed
- 1/4 tsp Baking powder
- 1/8 tsp Baking soda
- 1/3 cup Methi leaves/fenugreek leaves finely chopped
- 1/4 cup Ghee
- salt to taste
- In a wide bowl, add whole wheat flour, salt, ajwain, sesame seeds, chili powder, baking powder, baking soda, and mix all thoroughly. Then, add methi leaves and mix again.
- To this, add ghee and crumble all thoroughly. we should be able to hold the dough. This is a perfect consistency.
- Now add water little by little and knead to a stiff dough. It took 3 to 4 tbsps of water only. Cover it and set it aside for 15 mins.
- Take half of the dough, dust it in atta and shape it into a ball. Roll it to a thin disc, as shown in the video. Poke the dough with a fork.
- Using a small round cookie cutter, cut the dough into a round shape. Prepare all and keep it ready.
- Arrange prepared mathri in the air fryer basket. Air fry it at 160 degrees C for 15 mins. Time may vary depending on the size and thickness of the mathri.
- Once it cools down completely, store it in an airtight container.
- I air-fried mathri in 2 batches.
