Brinjal is termed as Vankaya in Telugu. Brinjal can be prepared in different methods such as gravies, dry fry, semi fry, or even curries. I always wanted to try this gutty vankaya in the air fryer and tried it this time when I found this Indian brinjal in the grocery store.
The traditional method uses extra oil to fry the brinjal. By using an air fryer, we can cut the amount of oil used. This masala is made with peanuts as the main ingredient. Almost most of the Andhra recipes use peanuts as their main ingredient. This fry goes well with rice or roti. We enjoyed this with tempered curd rice.
If you don’t have an air fryer, fry it in a pan using 3 tbsps of oil. Fry the stuffed brinjal in the pan for a few mins until it changes color. Then close the lid and cook it until it is soft and cooked well. It takes almost 10 to 15 mins in the pan too.
