Andra-style dondakaya fry is a spicy accompaniment that can be served with sambar, rasam, curd, along with rice. Kovakkai (in Tamil) is nothing but ivy gourd (in English), tindora (in Hindi), and Dondakaya (in Telugu).
This small vegetable has so many health benefits in it. It is good practice to include this at least once a week in our meals. Tindora is a good source of vitamin A, vitamin B, and beta-carotene. It is also known for its toxin-eliminating properties and can help clean the bloodstream.
Ivy gourd is said to have potent anti-inflammatory and antioxidant effects that may aid in the prevention or treatment of diabetes, high cholesterol, hypertension, and obesity. It also contains phytonutrients—such as saponins, flavonoids, and terpenoids—that are said to be good for the heart. Now let us see how to prepare this recipe.

- 300 gms Kovakkai/Ivy Gourd/Tindora
- 2 tbsp Peanuts/Verkadalai
- 1 tbsp Chana dal/kadalai paruppu
- 1 tsp urad dal
- 1/2 tbsp Coriander seeds/Vara Kothamalli
- 1 tsp Cumin seeds/Jeera
- 5 Dry Red Chili
- 1 strand Curry Leaves/Karuveppilai
- 1/4 tsp Turmeric powder
- salt to taste
- 3 tbsp oil
- Wash tindora thoroughly in water. Pat it dry. Cut both ends and slice it thin vertically, as shown in the video, and set it aside.
- Add peanuts and dry roast them in a pan until it turns golden brown. Then add chana dal, urad dal, and sesame seeds, and roast until chana dal and urad dal turns golden brown.
- Then add coriander, cumin, and dry red chili and fry until a pleasant aroma comes. Let it cool completely.
- Transfer this prepared masala to a mixer jar and grind it to a coarse powder.
- Heat oil in a pan. Add tindora, turmeric powder, and salt to taste. Close the lid and cook it on low flame for 10 mins. Mix in between twice or thrice.
- Tindora is cooked halfway. Now without closing the lid, cook for another 5 to 10 mins until all the water in the tindora is evaporated.
- Add the ground masala and curry leaves and cook for another 5 mins until the fry becomes crispy.
- Serve tindora fry with any rice of your choice.
- Increase or decrease the chili according to your taste.
- I have added black sesame. Instead, you can even add white sesame seeds.
- Roast masala evenly on low flame only.
- Tindora can be cut vertically or diagonally. But it should be thinly sliced.
