Healthy homemade nannari syrup with nannari roots and palm jaggery. The roots of the nannari plant, also known as Indian sarsaparilla, are used to make nannari syrup, a cool and healthful beverage.

Homemade nannari syrup is simple and affordable to make. To sweeten it, you can add fresh lemon juice for a zesty flavor and organic sugar or jaggery. You can also add some soaked sabja seeds (basil seeds) for an added cooling effect. Let us see how to prepare this recipe.

- Wash the nannari roots well by rubbing them in water to remove any dirt or clay. Dry them for a while until there is no moisture.
- Crush the roots using a mortar and pestle or a blender. You can also chop them into small pieces with a knife. Add 500 ml of warm water and soak it overnight.
- Once soaked well, strain the liquid using a fine mesh or a muslin cloth. Discard the roots.
- In another pan, add jaggery, 1/2 a cup of water, and boil until the jaggery is dissolved completely. No need to check for string consistency.
- Now, filter and add the jaggery water to the nannari syrup. Bring it to a boil and simmer on low flame for 20-30 minutes. The syrup thickens and reduces to half.
- Switch off the flame. Let it cool completely. Transfer to an airtight container and keep it refrigerated.
- Three to four teaspoons of nannari syrup, lemon juice, water, and ice cubes are combined to make nannari sarbath (nannari drink). You can also add some soaked sabja (basil seeds) for an added cooling effect.
