Paneer kheer is a very rich, creamy, and delicious dessert. This dessert can be prepared on any occasion and festival. As Holi nears, I thought this would be the right time to share this delicious kheer.
The basic ingredients that are required to make this dessert are milk, paneer, sugar, saffron, and cardamom powder. Use full-fat milk to get the rich taste of the kheer. Also, grate the paneer, do not grind it into a paste. Cook the milk on a medium-low flame, stirring it continuously. Do not leave it unattended, as the milk gets burnt easily. We need to stir and scrape the sides of the pan to get the thick malai milk.
You can check my homemade paneer at this link. If using frozen paneer, defrost it before using it. I have used brown sugar; you can even use white sugar or jaggery. Also, I have garnished pistachios. You can even use cashews and raisins sauteed in ghee. Now let us see how to prepare this recipe.

- 500 ml Milk full fat
- 100 gms Paneer/Indian Cheese grated
- 1/4 cup Sugar heaped
- 1/2 tsp Cardamom/Elachi powder
- 1 pinch Saffron
- 2 tbsp Pistachios/Pista to garnish
- Soak saffron in a tbsp of hot milk and set it aside.
- In a saucepan, add milk and boil until it reduces to half. Keep stirring and scraping sides. Please do not leave it unattended.
- Now milk becomes thick after 10-15 mins. Add sugar and milk-soaked saffron. Cook until sugar dissolves completely.
- Then add grated paneer and cardamom powder. Boil for another 4-5 mins. Once done, let them cool completely.
- Then refrigerate it for at least 3 hours. Garnish with pistachios and rose petals. Serve chilled.
- Use full-fat milk to get the creamy kheer.
- You can either use homemade paneer or frozen paneer.
