Arbi is a starchy root vegetable that is primarily used in Indian cooking. It is also referred to as colocasia or taro root. It is also known as Seppankizhangu in Tamil.
Arbi Fry, a crunchy and tasty snack or side dish, is one of the popular recipes made with arbi. Arbi Fry is a straightforward but delicious recipe that can be made fast and with only a few staple ingredients.
To make Arbi Fry, boil the arbi until soft, then chop it into little pieces. After being coated with a spice and rice flour combination, these pieces are fried till crispy and golden brown. Depending on individual preferences, the spices used in arbi fry can change.
In addition to being delicious, arbi fry is also healthy. Arbi is an excellent source of dietary fiber, vitamins B and C, and carbs. Minerals, including calcium, magnesium, and potassium, are also present. Now let us see how to prepare this recipe.

- 200 gms Seppankizhangu/Arbi/Taro root
- 1/2 tsp Mustard seeds /kadugu
- 1/4 tsp Turmeric powder
- 1/2 tsp Kashmiri Red Chili Powder
- 1/2 tsp Chili powder
- 1 tsp Rice flour
- salt to taste
- 2 tbsp oil
- Thoroughly clean the seppankizhangu—steam seppankizhangu in water for 15 mins or until soft but not mushy.
- After removing them from the steamer, let them cool. Peel the skin and cut it into thin rounds.
- Heat 2 tbsps of oil in a pan. Add mustard seeds. Once they start spluttering, add the turmeric powder, Kashmiri chili powder, and red chili powder and saute for a min. Do not let the masala burn.
- Add curry leaves and saute for a min. Add the seppankizhangu and salt to the pan. Mix well, making sure the spices coat the seppankizhangu evenly. Cook for 5 minutes on low flame.
- At last, add the rice flour and cook for another 1-2 mins until the fry turns crispy. Seppankizhangu varuval is ready.
- Enjoy your crispy and delicious seppankizhangu varuval as a side dish with rice or roti!
- I have steamed the seppankizhangu; you can boil the arbi until soft or pressure cook for a whistle.
- For variations, you can add crushed garlic or ginger garlic paste.
- If using ginger garlic paste, then you can add garam masala and pepper powder.
- Instead of chili powder, you can even add sambar powder for a different taste.
Crispy and delicious seppankizhangu varuval is ready to relish.
